Mandarin Upside Down Cake
Ingredients
4-5 mandarins, thinly sliced
Zest & juice of 1 mandarin
1 tablespoon brown sugar
2 tablespoons melted butter, to brush the pan
1 ¾ cup wholewheat flour
1 teaspoon baking powder
½ teaspoon baking soda
½ cup brown sugar
1/3 cup olive oil
½ cup milk
Method
Preheat oven to 180°C. Brush a 20cm spring form baking pan with butter
Sprinkle one tablespoon of brown sugar at the bottom of the pan
Arrange the mandarin slices in the pan and fill in any spaces with mandarin pieces
In a bowl, combine flour, sugar, baking powder and baking soda
Add olive oil, milk, mandarin zest and mandarin juice and mix well
Pour the batter into the cake pan over the mandarin slices carefully. Bake for 40-45 minutes or until cake is golden and a knife inserted comes out clean
Allow the cake to cool for 10 minutes before turning it out on a cooling rack
Once cooled, serve with plain yoghurt
