Ingredients

3 mandarins
100g butter, softened
1 cup flour
¾ cup brown sugar or coconut sugar
1/3 cup plain yoghurt
2 eggs
¼ cup milk
1 teaspoon cinnamon
¼ teaspoon baking powder

Topping

½ cup plain yoghurt
Drizzle of honey
Sprinkle of ground cinnamon
2 mandarins

Directions

  1. Preheat the oven to 180°C fan bake and line a loaf tin with baking paper
  2. Using a fork or electric mixer, cream butter and sugar until creamy. Add the eggs, yoghurt and milk, stir to combine
  3. Add the flour, baking powder, and cinnamon and stir to form a batter
  4. Grate the zest of 1 mandarin into the batter. Cut up the segments of 1 mandarin into small pieces and add into the batter. Squeeze the juice of 2 mandarins and add into the batter. Mix well
  5. Pour the batter into the loaf tin and bake for 35-40 minutes or until it turns golden and a knife comes out clear
  6. Remove from the loaf tin and transfer to a wire rack to cool completely
  7. Once cool, cut into slices and serve with yoghurt, mandarin segments, honey and cinnamon
