4 mandarins, peeled
¼ head green cabbage, shredded
¼ head red cabbage, shredded
2 carrots, washed and grated
½ cup coriander, roughly chopped
2 cups sugar snap peas, cut in half
¼ cup cashew nuts
½ cup crunchy noodles


2 tablespoons ginger, minced
2 cloves garlic, minced
Juice of 1 lime
3 tablespoons olive oil
3 tablespoons white wine vinegar
1 tablespoon honey
1 tablespoon soy sauce or tamari
½ teaspoon chilli flakes


  1. In a small bowl, mix-together the dressing ingredients
  2. In a large bowl, combine all the salad ingredients apart from the cashew nuts and crunchy noodles
  3. Drizzle with salad dressing and mix thoroughly. Top with cashew nuts and crunchy noodles just before serving
