French Toast with Ricotta & Mandarin Compote

Ingredients 

Mandarin Compote
3 mandarins
1 tablespoon sugar
½ teaspoon ground cinnamon
2 tablespoons honey or maple syrup

Whipped Ricotta
1 ½ cups ricotta
1 teaspoon ground cinnamon
1 teaspoon honey

French Toast
2 eggs
½ teaspoon cinnamon
½ cup milk
6 slices bread
1 tablespoon olive oil

 

Method

To make the mandarin compote, juice 1 mandarin and add juice to a small saucepan over medium heat. Add the cinnamon, sugar, mandarin segments and honey

Stir until the liquid starts to boil then reduce heat and simmer for 3 minutes. Remove from the heat

To make the whipped ricotta, add ricotta, cinnamon and honey to a small bowl and mix well

For the French toast, whisk the eggs in a bowl, add the cinnamon and milk

Heat a large fry pan over medium heat and add the olive oil. While that is heating, add each slice of bread to the egg mixture, flipping the bread and coating both sides

Place the bread in the pan and cook for 2-3 minutes on each side or until golden

Transfer the cooked French toast to serving plates and repeat, using the rest of the bread and egg mixture

To serve, place toast on plates, add a scoop of the whipped ricotta and spoon over the mandarin compote
