Lemon Poppy Seed Loaf

Ingredients 

Juice and zest of 2 lemons
½ cup butter, softened
3 eggs
½ cup sugar
½ teaspoon vanilla extract
2 cups plain flour
1 tablespoon poppy seeds or chia seeds
2 teaspoons baking powder
¼ cup milk of choice

Glaze (optional)

Juice of 1 lemon
¼ cup icing sugar

 

Method

Preheat oven to 180°C. Grease a loaf tin well

In a large bowl mix the butter, eggs, sugar, lemon zest and lemon juice

Add the flour, poppy seeds and baking powder to the bowl and mix well until combined

Pour mixture into the loaf tin and bake for 30-35 minutes or until a knife comes out clean

Cool for 5 minutes before removing and transfer to a wire rack

Add the glaze ingredients to a bowl and mix well. Pour over the bread and top with extra lemon zest if desired.

Cut into slices and enjoy
