Lemon Crumble Tart

Crumble ingredients 
115g butter, room temperature
125g sugar
125g all-purpose flour

Filling
Zest of 1 lemon
½ cup lemon juice
1 ½ cups milk
2 tablespoons butter
2 eggs, lightly beaten
3 tablespoons flour
¾ cup sugar

 

Method

In a bowl, combine crumble ingredients together with hands until it forms a loose dough

Pat half of the dough evenly into a 22cm round pie dish or tin

Preheat oven to 180°C

In a bowl, combine flour, sugar and 2 tablespoons of milk

Heat remaining milk in a saucepan on low heat. Add the flour mixture and stir until it has a custard like consistency

Add lemon zest, lemon juice, butter and beaten eggs, stirring constantly until combined and thick

Pour onto crumb crust then sprinkle remaining half of crumble on top of the mixture

Bake for 20-25 minutes or until set

Allow to cool for 60 minutes before cutting. Sprinkle with icing sugar and top with lemon slices to serve
