Ingredients
1kg potatoes, scrubbed
2 fresh thyme sprigs, leaves picked
1 small handful fresh coriander, chopped
3 garlic cloves, crushed
Juice and zest of 1 lemon
4 tablespoons olive oil
½ teaspoon chilli flakes
Pinch salt
Directions
- Preheat oven to 200°C
- Thinly slice potatoes leaving the bottoms intact, and place in an oven dish
- Mix olive oil, thyme, garlic, chilli flakes, lemon juice and zest. Drizzle over the potatoes and sprinkle with salt
- Bake for 60 minutes or until golden and crisp. Garnish with fresh coriander. Best served warm
