1kg potatoes, scrubbed
2 fresh thyme sprigs, leaves picked
1 small handful fresh coriander, chopped
3 garlic cloves, crushed
Juice and zest of 1 lemon
4 tablespoons olive oil
½ teaspoon chilli flakes
Pinch salt


  1. Preheat oven to 200°C
  2. Thinly slice potatoes leaving the bottoms intact, and place in an oven dish
  3. Mix olive oil, thyme, garlic, chilli flakes, lemon juice and zest. Drizzle over the potatoes and sprinkle with salt
  4. Bake for 60 minutes or until golden and crisp. Garnish with fresh coriander. Best served warm
