3 oranges, peeled and diced
3 cups spinach or romaine lettuce, roughly chopped
2 cups red cabbage, roughly chopped
1 large carrot, finely sliced
1 spring onion, finely sliced
¼ cup sliced almonds
1 cup crispy noodles
Fresh parsley or coriander to garnish

1 clove garlic, minced
4 tablespoons olive oil
3 tablespoons white wine vinegar
2 tablespoons soy sauce or tamari
1 tablespoon sesame oil


  1. In a large bowl, combine spinach, red cabbage, carrot, onion and almonds
  2. Whisk dressing ingredients together in a bowl
  3. Cover salad with orange pieces and noodles.
  4. Drizzle dressing over the salad, garnish with parsley or coriander and serve
