2 large grapefruit, peeled and chopped into small pieces
3 large tomatoes, sliced
4 cups rocket or baby spinach
¼ red onion, thinly sliced
¼ cup pistachios, shelled
1 handful basil leaves
¼ cup feta, crumbled


2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
Black pepper


  1. In a small bowl, mix-together the dressing ingredients
  2. In a large bowl, combine all the salad ingredients and drizzle with salad dressing
