2 grapefruit, peeled and chopped
1 cucumber, sliced and cut into quarters
2 avocados, diced
Handful fresh mint, roughly chopped
2 spring onions, sliced
1/3 cup sliced almonds


Juice of 1 lemon
3 tablespoons honey
2 tablespoons olive oil
2 tablespoons white wine vinegar


  1. In a small bowl whisk together dressing ingredients
  2. Place all salad ingredients into a large bowl and mix. Drizzle dressing over salad and serve immediately
