Ingredients
4 mandarins, peeled
¼ head green cabbage, shredded
¼ head red cabbage, shredded
2 carrots, washed and grated
½ cup coriander, roughly chopped
2 cups sugar snap peas, cut in half
¼ cup cashew nuts
½ cup crunchy noodles
Dressing
2 tablespoons ginger, minced
2 cloves garlic, minced
Juice of 1 lime
3 tablespoons olive oil
3 tablespoons white wine vinegar
1 tablespoon honey
1 tablespoon soy sauce or tamari
½ teaspoon chilli flakes
Directions
- In a small bowl, mix-together the dressing ingredients
- In a large bowl, combine all the salad ingredients apart from the cashew nuts and crunchy noodles
- Drizzle with salad dressing and mix thoroughly. Top with cashew nuts and crunchy noodles just before serving
