2 cups shredded green cabbage
1 cup shredded red cabbage
1 carrot, grated
½ cup coriander, roughly chopped
1 bunch of spring onions, thinly sliced


Juice of 2 limes
Zest of 1 lime
1 clove garlic, minced
¼ cup olive oil
1 teaspoon Dijon mustard
Pinch salt & pepper


  1. In a small bowl, whisk together the dressing ingredients
  2. In a large bowl, combine cabbage, carrot, coriander and spring onion. Pour the dressing over the slaw and toss well
