Ingredients

4 fresh corn cobs, husks attached, silk removed
40g butter, softened (or olive oil or low fat spread)
1 tablespoon honey
1 tablespoon lime juice
Zest of half a lime
1 or 2 fresh chillies chopped finely (you can use more if you like it hot)
Salt and pepper to taste

Directions

  1. Remove silk, leaving husks attached
  2. Soak whole (husks included) for a least 10 minutes in cold water
  3. Combine all dressing ingredients in a bowl
  4. Pull husks back to baste with half the dressing then
  5. Cover corn with husks and barbecue on medium heat for about 10 minutes
  6. Remove husks and brush corn with the remaining dressing to Serve

Note: Barbecued sweetcorn is easy to do and the results are delicious. The key to not burning the sweet corn is to soak them in water prior to cooking (make sure you remove the silk first)
