Grilled Persimmons with Mascarpone

Ingredients 
3-4 persimmons

Mascarpone mixture
200g mascarpone
1 tablespoon vanilla extract

Garnish
3 tablespoons honey
Juice of 1 lime
1 tablespoon sugar
1 teaspoon cinnamon
¼ cup walnuts, roughly chopped
Mint leaves

Method

Preheat the oven to 200ºC on grill. Slice persimmon in half crosswise and place onto a baking dish or oven tray

Drizzle with honey and sprinkle over sugar and cinnamon. Grill for 6-8 minutes or until persimmons are golden brown and caramelised.  Remove from the oven and drizzle with lime juice

In a bowl, combine mascarpone and vanilla extract

To serve, place mascarpone into serving bowls or a serving plate, and top with grilled persimmon

Sprinkle with chopped walnuts, mint leaves, and extra lime juice if desired
