Ingredients

3-4 tangelos, peeled and sliced
180g halloumi cheese, sliced
1 tablespoons olive oil
3 cups mixed greens
Handful fresh parsley
Handful fresh mint leaves

Dressing

3 tablespoons red wine vinegar
1 tablespoon olive oil
1 garlic clove, minced
Juice of 1 tangelo
Pinch of pepper

Method

Preheat large pan to medium heat and add olive oil. Pan fry the halloumi slices until crispy

In a small bowl, combine dressing ingredients and mix well

On a serving plate or bowl, add mixed greens, tangelo slices, halloumi cheese, parsley, and mint leaves

Drizzle with dressing and serve fresh
